Black Angus Roast Beef on Garlic & Lemon

Today we're having roast beef to celebrate. Preparing a Black Angus is a lengthy process but it's also easy to prepare. What do we need to prepare our roast beef perfectly?

Ingredients

1.5kg Black Angus Roastbeef
1/2 organic lemon
4 sprigs of thyme
something salt & pepper
1 1/2 tablespoon of hot mustard
2 tablespoon olive oil

So let's get started. We always buy our meat from sustainable livestock farming. For my godchild's first day at school, we bought a Black Angus roast beef (I GOT THE RECIPE FROM HER FATHER). We prepare the meat the day before serving. Salt and pepper on the meat, then rub the surface with the lemon, spread the mustard and olive oil on top. We now add the sprigs of thyme and wrap the meat in cling film and then put it in the fridge. The next day we take the meat out of the fridge and let the roast beef warm up to room temperature. Now the meat is grilled on our Weber grill. Delicious roasted aromas develop when grilled.

Now the roast beef goes into the oven and is left in the oven for 4-5 hours at 80 degrees Celsius. Here is an overview of the temperature at which the meat is cooked to which degree:

doneness core temperature Description
Blue Rare 40-45 degrees slightly browned on the outside, completely raw on the inside
Rare / Bloody 45-50 degrees seared on the outside, 75% still raw on the inside
Medium rare / English 50-54 degrees seared on the outside, 50% raw on the inside
medium / pink 54-56 degrees seared on the outside, 20-25% raw on the inside
medium well 56-60 degrees slightly pink inside (perfect for my taste)
well done 60-65 degrees completely cooked through

After 4 hours, we take the roast beef out of the oven with a core temperature of 56-60 degrees. We measured the temperature beforehand with a Bluetooth thermometer and now we can enjoy the Black Angus Roast Beef. We can serve the roast beef in thin slices with remoulade or, if we want to serve the meat in thicker slices, with a nice potato salad. So, enjoy your meal!
