  • 1-2 onions cut into rings

  • Dutch Oven (FT6 for 2 legs, FT4 for one)
  • Knife
  • wooden board
  • vacuum bag or device
  • temperature sensor
  • pull claws

The preparation

To make the turkey legs juicy and tender, you should season them the day before and store them in a vacuum bag in the fridge overnight. The next day you can preheat them and sear them on both sides. Now fry the onions in the rendered juice and then deglaze with Dr. Pepper or cola. Now add some of the chicken stock and BBQ sauce and top up the whole thing with stock and BBQ sauce. Add the legs and check the core temperature with a temperature probe. Now close the Dutch oven and let the meat braise at a temperature of 160 degrees Celsius for around 2.5 hours until the core temperature of 80 degrees Celsius is reached.

After you have taken the legs out of the Dutch oven, you should remove the skin and "pull" the meat. It is best to use pulling claws for this. The onions from the gravy can now be folded into the meat to make it even juicier. Use some of the juice to drizzle over the meat.
