Today we want to try something a little more complicated. Today we will prepare traditional Russian-style shashlik. To do this we need a large arsenal of spices and a little time. Otherwise, the preparation is straightforward with the right tools.
Here are our ingredients

Ingredients for shashlik sauce
100 ml | apple cider vinegar |
500 ml | chicken broth |
500 ml | strained tomatoes |
100 grams | Honey |
3 tablespoons | paprika or tomato paste |
50 ml | Worcestershire sauce |
2 tablespoons | sweet paprika |
1 tbsp | Pimentón de la Vera |
1 tbsp | Black pepper |
1 tbsp | curry powder |
a pinch | Salt |
We divide the preparation into three steps:
- Preparation
- grilling skewers
- Prepare shashlik sauce with the shashlik skewers
1. Preparation
The first step is to prepare the ingredients for today's shashlik. This means we wash the meat with cold water and pat it dry with kitchen roll until it is somewhat dry. Now we cut the pork neck into 3cm x 3cm pieces of meat. Then we peel and quarter the onion. We take 2-3 outer rings of the onion for the skewers - we cut the rest of the onion into small pieces for the sauce. The peppers are now also cut into pieces of around 3-4 cm.
Now comes the spice mixture. The above ingredients are brought together in a mortar and then crushed and mixed with the mortar. The finished spice mixture is then added to the bowl with the portioned meat.
The meat is mixed with the spice mixture. The meat can then be left to marinate for an hour.
After the meat has been simmering for an hour, we skewer the peppers, onions and pork neck alternately on the skewers. The finished result can be seen in the picture.
2. Grill the skewers
The next step is quick and easy. We preheat our grill to 300 degrees. Now we take the finished skewers and leave them on the grill for 10-15 minutes. We turn the skewers regularly every 2-3 minutes so that they don't burn.
3. Prepare shashlik sauce with the shashlik skewers
Now comes the most time-consuming but also the most enjoyable step. We prepare the sauce for the shashlik. We use an oven dish from Ikea and add the onion. If there is any leftover pepper, just add it too and fry it in the oven dish on the stove or grill with olive oil.
Then we gradually add all the ingredients from the overview "Ingredients for shashlik sauce". This can be done in any order.
In the next step, we get our finished grill skewers and slide the grilled food from the skewer into the bowl. Then we cover the oven dish with aluminum foil and place the dish either on the grill or in the oven. The grill or oven should be preheated to 160°C. The whole thing is then cooked for around 60 minutes. After 60 minutes, the result is really impressive.
