Starter Sweet Potato+Feta in Puff Pastry

Today we want to try a versatile vegetable: the sweet potato. You can find the sweet potato in many dishes. As the name suggests, it tastes sweet but above all it is very filling. So it was a no-brainer to make a small starter from the recipe inspired by Captain Cook . Here is our list of ingredients.

Ingredients (4 servings):

400 grams sweet potato
100 grams feta cheese
240 grams puff pastry
4 branches thyme
120 grams yogurt

Spices:

1 whole crushed chili peppers
4 tablespoons olive oil
Something Salt
Something pepper

Now we start preparing everything. We preheat the oven to 180°C on convection (200°C top and bottom heat) and get the dessert rings ready. We recommend one ring per person. That means we calculate around 100 grams of sweet potato per person. To ensure that the sweet potato fits into the dish, we dice the sweet potato. You will need a large, sharp kitchen knife for this. Then we take the thyme, wash it and shake it dry. Now we chop the thyme into small pieces. For the right seasoning, we put the diced sweet potatoes in a deep plate and mix the olive oil, thyme, crushed chili peppers and salt in the skin. We also grate the Parmesan cheese into small pieces.

Now we prepare the puff pastry and spread it out on our permanent grill mats . We use the dessert rings from the cutter and cut out a lid and a base for each one. We also roll the ring completely around its own axis on the puff pastry and cut the puff pastry to size. We cut small strips for decoration, which we then lay lengthways over the top, similar to an American apple pie. We take the puff pastry and line the tin with it. In the next step, all the ingredients are put into the tin. We put around 100 grams of sweet potato in the tin, then add the feta cheese and then put the puff pastry lid on top. As the second to last layer, we add some Parmesan and stick the puff pastry strips lengthways over the Parmesan layer.

Now everything goes into the oven for about 25 minutes. The result is impressive and tastes simply excellent. Have fun trying it out!
